This release commemorates the 1-year anniversary of Cat Nap Coffee Roasting. This is a very special coffee that fully embodies our "Small But Special" ethos.

Brought to us by renowned producer Julio Madrid and Cafe Uba in Risaralda, Colombia, this coffee is the result of years of research into advanced coffee processing using controlled culturing and bioreactors to achieve specific fermentation results.

The next big leap forward for Julio and Café Uba is the process of nitrogen culturing. 

Julio had this to say about the process and the steps it took to get here (translated):

"Nitrogen fermentation is a next step forward from Culturing fermentation. In 2020 we conducted a research with the Universidad de los Andes in Colombia, the research was called Metagenomic, metabolomic and sensory characteristics of fermented coffee (Coffea arabica var. L Castillo) inoculated with microbial starter cultures. This research allowed us to understand many things that happen in our fermentations, especially the type of yeasts and bacteria that are part of our fermentations, so we decided to create a stainless steel bioreactor with the ability to retain gases and exchange, to measure temperature and take samples of the leachate or mash of the fermentation, with the aim of providing the best environment for these yeasts and bacteria to work efficiently together with the coffee."
