This special microlot from husband and wife producers Roger y Isabel of Fina Las Mercedes is known as "Fruit Symphony" from the importers, Gold Mountain Coffee Growers, and that name couldn't be more right. But apparently Isabel likes to refer to it as "tutti frutti", and I like that. So we're going with that.
This is a big fruit explosion. Everything you would expect from a wonderful natural process coffee, but turned up just a tad with the addition of carbonic maceration along the way. Carbonic maceration, a process also seen in winemaking, is a form of anaerobic fermentation where oxygen is displaced by carbon dioxide. Here it amps up the juicy tropical fruit notes.
